Easy peasy Itailian Beef sandwiches

This is a household favorite at Casa de B&A.  Seriously, if you're a busy mom on the go, or just busy in general, this recipe is easy peasy 123, and delicious beyond belief, or so we think so.  I found this recipe on Food.com, and we've had it a favorite of ours ever since! 


Here's what you will need:
4lbs. bottom round beef roast
8oz. Balsamic vinaigrette or 8oz. olive oil and vinegar dressing
1 package or dry onion soup mix
Italian seasoning

Place everything in the crock pot and cook on low for 8 hours.  You can find the exact recipe HERE.  I altered the recipe just slightly because I like the let the meat cook a bit longer to let the juices set in.  Brendan loves it and we are actually having it tonight.  Currently, my house smells delicious!  I serve the meat on wheat hoagie buns and we like our sandwiches topped with mustard and dipped in the Au jus.  I'm making baked potatoes and sauteed fresh green beans to top off the Italian beef tonight.

We tried this this week and they were delish! Thanks for sharing.

I do have a tip for others though: I tried store brand balsalmic dressing and it just wasn't very flavorful so I ended up adding more vinegar before serving. Lesson learned: Splurge for the good stuff! :)
